      Sliced Herb Roasted Pork Tenderloin, Sweet Chili Glaze

Pan Seared Rainbow Trout -

      Trout Fillet, Toasted Pecan, Maple Beurre Noisette (brown butter)

Vegetable Wellington -

      Grilled Vegetables, Boursin (cream style) Cheese and Parmesan

      Wrapped in Flaky Puff Pastry, Roasted Red Pepper Coulis

  hedgehog both days, you must register for both

Discussion Panel                                                                  no cost

A panel of breeders and rescuers will hold an audience participation discussion. Points to be covered is what we, as hedgehog fanciers and caregivers, are most concerned with such as clean breeding lines, reducing genetic health issues as much as possible, rescue worries and needs, how each of us can work toward bettering lives of our tiny quilled companions.

Abbreviated Agility Games                                                 $5

Hedgehogs can enter to compete in Hurdles and Floor Exercises.
